
This highly-prized and sought-after fruit is used in Japanese cooking and more recently seen here in desserts, soft drinks and cocktails. It has a distinctive flavour and aroma and is said to taste like a cross between a lemon, grapefruit and mandarin, with some floral notes. There are lots of seeds in them, but the zest is highly prized for fish, salads and soups, while the juice is perfect for dressings, marinades, cocktails and sorbets.
