Beautiful, edible art in cauliflower form! This goes by many names including Romanesque cauliflower, broccolo Romanesco, fractal broccoli/cauliflower, and it's easy to see why it gets called the latter. However, it is more cauliflower than broccoli. It has a firmer texture and a more delicate flavour than cauliflower with a nutty flavour. It is often used in Italian cuisine, in salads or on a carpaccio. You can cook this in the same way as cauliflower and is beautiful roasted.
