Broccoli & Radish Salad with Lemon Dressing

Ingredients

1 head broccoli, chopped into bite size florets
3 or 4 radishes, sliced very thin
1 bunch of spring onions, sliced
1/4 cup fresh lemon juice
1 or 2 tbs lemon zest
2 Tbs olive oil
2 cloves garlic, pressed
1 tsp mixed herbs
1/3 cup sliced almonds, toasted
Fresh parmesan cheese, shaved

Directions

Add a bit of olive oil to a skillet and toss in broccoli. Season with salt and pepper and cook just until broccoli turns bright green - you want it to keep its crunch. Remove from heat and set aside. Make the dressing by combining the lemon juice, pressed garlic, 2 tbs olive oil and herbs. Toss broccoli, sliced radish, almonds and onions with dressing. Top with lemon zest and shaved parmesan. Serve warm or cold.
