Parmesan Roasted Pumpkin and Kale

Ingredients

½ pumpkin, peeled and cut
¾ C cream
2 or 3 handsful of kale
⅔ C parmesan cheese, grated
salt and pepper to taste

Directions

Preheat oven to 180C. Toss pumpkin with cream and season with salt and fresh black pepper. Bake, covered, about 30 minutes. Add the kale and stir in half the parmesan cheese. Sprinkle the remaining cheese over the top. Now bake uncovered until pumpkin is cooked, about 15 minutes more.
