The classic for crisps, these Scottish heritage russet potatoes have a fantastic flavour, are very floury and wonderful for roasting, baking and chipping. The Golden Wonder crisp company, founded in Edinburgh, is named after these potatoes because they were deemed the best potatoes for crisps.
They can also be steamed but, if boiling, they must be kept an eye on as they can disintegrate.
