The banana is a very versatile fruit and is used in both savoury and sweet foods. It's great on a sandwich or rolled up in a tortilla wrap with some peanut butter, coconut and a bit of maple syrup, which you cut up into slices and store in a tub in the fridge. If you freeze it then blend it and re-freeze it, it makes a delicious substitute for dairy ice-cream. It's also a vegan favourite for a cake base when mixed with dates and walnuts.
